The maestro mezcalero Efrain Hernandez Escobar has chosen the Espadin variety agave for production, which is processed once it reaches adulthood, that is, 8-10 years old. The leaves of the plant are cut to retain only the most precious part, the heart or piña. The cooking of the piña takes place according to the oldest traditions in an underground stone or brick oven, which naturally retains heat without loss.
At the end of the long cooking process, the agave is crushed with a stone mill powered by a horse. The fibrous mash is left to macerate and ferment with natural yeasts for several days, so that the juice can then be extracted. Fermentation occurs in two successive phases in discontinuous copper stills, which allow for the sublimation of scents and aromas, giving a nectar of remarkable expressive finesse.
