In Gaiole in Chianti, on the road from Pianella Siena leads to Brolio Castle, there is the Fattoria San Giusto a Rentennano, for centuries owned by the family of the Ricasoli Brolio Castle. The Farm was an ancient Cistercian monastery, also called San Giusto alle Monache, which became valid fort at the time of the wars between Guelphs and Ghibellines. Today there are only the battlements of the wall and the massive walls in Barbican, but inside the underground cellar offers wines the opportunity to rest in semi-darkness with optimal temperature and humidity for aging in large wooden barrels . The estate is spread over a total area of 160 hectares, of which 31 are vineyards, planted with 11 olive grove and the remaining arable crops, forest, meadow and pasture. The soils of the vineyards are varied, but mainly tuffaceous with over 70% of sabbia.I brothers Martini, now owners of the estate, you have planted many varieties of grapes: Sangiovese, Canaiolo, Merlot, Trebbiano and Malvasia. Whole rigmarole from grapes to wine is treated carefully following the dictates of organic farming, all operations in the cellar are personally brothers Elisabetta, Francesco and Luca, assisted by the enologist Attilio Pagli. A place of honor among the wines produced by this company is up to the Chianti Classico DOCG, produced according to the classic Chianti blend, that is, 95% Sangiovese and 5% Canaiolo: fermented in cement tanks enameled or stainless steel for 14 days then matured in oak casks or barrels for about a year, bottled continues its aging for six months before being placed on the market, valuable bearer of Chianti worldwide.
