Sassocorno
Sassocorno is a wine estate that does not originate from a family heritage, but from a deliberate act of love for a unique territory: Istria. Stefano Poser and Francesca Lus, having fallen in love with this land, decided to put down their roots here and bring to life a project of sustainable viticulture. The winery is set within a natural mosaic where biodiversity reigns supreme, surrounded by woods and meadows in an ideal habitat for wild flora and fauna. Every business decision, from the careful selection of indigenous grape varieties to vineyard management, aims to honour the unbreakable bond with the terroir.
Sassocorno’s production method reflects a non-interventionist philosophy. In the vineyard, techniques such as green manure are used to enrich the soil, along with severe pruning to achieve very low yields. The manual management of suckering and canopy work, combined with the introduction of bees as allies of biodiversity, defines an approach that has led to organic certification. In the cellar, fermentations occur spontaneously in stainless steel or concrete thanks to indigenous yeasts alone. The process continues with long ageing in 5 to 15 hectolitre oak and acacia barrels, or in amphorae, where the wine rests patiently until bottling.
Sassocorno wines are a pure and authentic expression of the land from which they originate. Thanks to the bâtonnage technique, which keeps the fine lees in suspension during the first months of ageing, the wines gain richness and a supple mouthfeel. Their sensory profile is dominated by a saline minerality that constantly recalls the geological origin of the soils, enriched by an aromatic complexity that evolves and refines over time.
