Segnana

Segnana is a historic distillery from Trentino, active since 1860, when Paolo Segnana had the ingenuity to create a mobile distillation apparatus, horse-drawn, to be transported from farm to farm to distill on-site the fresh pomace just pressed, as prescribed by Austro-Hungarian law. At the end of the century, a stable headquarters was founded in Borgo Valsugana, destined to become a reference point for the entire region. After over a century of history, the Lunelli brothers, who became the main suppliers of pomace thanks to the activities of the prestigious sparkling wine house Ferrari, acquired the distillery inaugurating its modern success.

Today the Segnana distillery continues to produce grappa as it once did, through discontinuous bain-marie distillations in copper stills and utilizing the mineral water Surgiva from the Adamello Brenta Natural Park. Only fresh pomace from Trentino grapes subjected to soft pressing is used, especially Chardonnay and Pinot Nero used for the production of sparkling wines.Ferrari. The intuition to adopt the Solera system for aging has led to the creation of soft, rich, and elegant distillates. This system consists of the progressive filling of a stack of wooden barrels: each year, half of the contents of the barrels placed higher up is transferred to those lower down.
