The vines are cultivated under a biological regime, certified since 2017, based on a very important concept in viticulture: timeliness. To this end, weather stations are installed in each parcel, allowing for constant monitoring of the risks of phytopathogenic attacks. Cristian wants the processing of the grapes to be as simple as possible, with the clusters destined for sparkling wines being pressed whole and the masses worked exclusively in steel tanks, with low doses of added sulfites.

There are three labels produced by Spensierata: two Franciacorta sparkling wines, one Brut and the other Saten, and a Curtefranca Rosso. Derived from 7 different plots vinified separately and then blended, the Franciacorta condense the character of the territory, with a soft and fine taste development.
