Ullens - Domaine de Marzilly
The Domaine de Marzilly Champagne Ullens is a young Maison founded in 2012. It is located near Hermonville, in the area of the Massif de Saint-Thierry, the northernmost region of Champagne. The revival of the domaine is due to Maxime Ullens de Schooten, a young Belgian architect, who discovered this property and immediately fell in love with its historic residence, a sort of true château, surrounded by an estate of 32 hectares, with a plot of old vines that survived the phylloxera destruction. The discovery of this vineyard intrigued Maxime, who gradually approached the world of viticulture, eventually making it his profession, with the aim of starting to produce great Champagnes.
After several years of renovation work on the building and restoration of the vineyards, today the estate can count on 4 hectares of vineyards cultivated with Pinot Noir, Chardonnay, and Meunier, on soils characterized by a significant presence of sands. The vineyards are managed in organic farming, with the utmost respectof nature and seeking to promote environmental biodiversity. The particularly cool climate of the area, characterized by significant temperature fluctuations between the hottest hours of the day and night, favors excellent ripening of the grapes, which arrive at harvest time with rich aromas and a high base freshness, perfect for creating great vins clairs.
At the end of the harvests, the different plots are vinified separately, to enhance the peculiar characteristics of each and to have a wide selection of base wines to choose from when creating the blends. After the gentle pressing of the bunches, with the traditional Champagne presses, the free-run must ferments directly in oak barrels, in order to acquire structure and aromatic richness. After a period of decantation and aging in wood, the creation of the cuvées and the second fermentation in bottle according to the Champenoise Method takes place. The Ullens Champagne range offers labels of excellent quality, which well represent the area oforigin. The use of low dosages always keeps the personality of the terroir of Saint-Thierry in the foreground.
