Val Frison
The small champenoise reality Val Frison is configured as a genuine winery of Aube, an area at the southernmost tip of the Champagne wine region located a short distance from Chablis, a territory that shares the kimmeridgian geological matrix. At the helm of the estate since 1997 is Valérie Frison, a producer from the Côtes des Bar who in 2007 decided to start bottling independently, after decades in which her family sold grapes to local cooperatives or to négociant in the region, releasing her first Champagnes in 2010. The values that guide Valérie are the passion for viticulture and love for her land, elements that lead the winemaker to care for her vineyards with sincere dedication. In fact, as early as 2003 the producer began the conversion of the entire estate to organic farming.
The Val Frison estate has 6 hectares of vineyards, managed under certified organic regime and located around the village of Ville-sur-Arce, in the heart of the Côtes de Bar. Here, Valérie cultivates the traditional grape varieties Chardonnay and especially Pinot Noir, rooted on kimmeridgian and portlandian soils, the former rich in marine fossils while the latter characterized by a strong limestone component. The winemaking vision embraced by the producer aims to enhance the peculiar characteristics of the territory through simple and never invasive operations. According to this philosophy, fermentations occur spontaneously in used barrels, with full completion of malolactic fermentation as well. Once ready, the sparkling base is bottled and added with the liqueur de tirage for the prise de mousse according to the Methode Champenoise, followed by a long period of aging sur lie before degorgement. Finally, the bottles are not dosed, but rather topped up with the same wine, thus seeking maximum expressive purity.
Even when not labeled as such, all the sparkling wines of Domaine Val Frison come from a single vintage, thus configuring themselves as an authentic reflection of the vintage as well as the territory. These are Champagne Brut Nature that stand out for their vibrant mineral tone, quite different from the chalky soils of other areas of the region.
