VII Hills
The VII Hills Gin distillery is an Italian production reality specialized in the production of artisanal gins with pronounced aromaticity. The project was launched in 2014 by Danilo Tersigni, Francesco Medici, and Filippo Previero, three guys from the beverage world who met in London and decided to create the first Italian London Dry Gin distributed abroad, made from botanicals gathered in the Roman countryside, inspired by the seven hills of the Capital, hence the name VII Hills. Initially, the distillation activity was carried out in England, but in 2017 the distillery moved to Italy, precisely to the town of Moncalieri in Turin, changing the recipe in order to provide a 100% Italian product: a true Italian Dry Gin.
The production of VII Hills Italian Dry Gin begins with the careful selection of botanicals, cultivated in the countryside surrounding the Capital and chosen by the Master Distiller. Once the right combination is established, the ingredients are infused in a neutral distillate and then a second distillation under vacuum at low temperature (vacuum pot stills), a relatively recently introduced technique that allows for the extraction and enhancement of the aromatic essence of the botanicals. The seven ingredients used in the production of VII Hills Gins are juniper, celery, Roman artichoke, dog rose, blood orange, pomegranate, and chamomile, all spices and botanicals traditionally used as medicinal remedies or culinary ingredients in Ancient Rome.
From this delicate process, the Gins of VII Hills are born, distillates that reflect the innovative spirit and the Italian pride of Danilo, Francesco, and Filippo. These are Gins with rich and particularly aromatic scents, capable of transporting the senses through the alleys of Rome. The recommendation is to enjoy VII Hills products neat with a few ice cubes or in combination with other ingredients to create cocktails with a distinctly Italian flavor, such as Negroni or Roma Mule.
