Yuu Baal
The Mexican reality Yuu Baal is dedicated to the artisanal production of mezcal, respectfully observing the consolidated tradition of the State of Oaxaca, in the southern part of Mexico. This distillery brings together a number of mezcaleros from different villages in the State, such as San Juan del Rio, San Luis del Rio, Tlacolula de Matamoros, and Miahuatlan, and each mezcal is a sincere expression of its area of origin. The name of the distillery comes from the association of the terms “yuu”, which means “land”, and “baal”, meaning “fire”, symbolizing the two main elements that give life to mezcal: the land where the agave grows and the fire used in the cooking and distillation phases.
The mezcaleros that Yuu Baal brings together cultivate with love and dedication agave varieties Espadin, Tepeztate, and Madrecuishe, along with the wild variety Tobala. The processes are carried out strictly by hand, and once the plant has reached full maturity, the heart is harvested.of the agave, called piña due to its characteristic shape resembling that of a pineapple. The piña is then traditionally cooked in a brick oven and subsequently pressed to extract the sugary juice contained within. This juice undergoes a few days of alcoholic fermentation, after which the fermented liquid is distilled in stills to obtain the so-called Joven mezcal, which is not subjected to any aging period. At this point, the distillate can be directly bottled as Joven or left to age from 2 to over 12 months in oak barrels for the Reposado and Añejo versions.
Since they come from different territories and the agave is cultivated by various producers, Yuu Baal mezcals are characterized by very heterogeneous styles and types, reflecting the environmental and cultural richness of the State of Oaxaca. They range from the earthy and smoky character of Joven Tobala to the expressive complexity of Reposado Espadin, passing through
