AMARONE CLASSICO VIVIANI 2018 DESCRIPTION

Cantina Viviani's Amarone Classico was born in Mazzano di Negrar, in the heart of Valpolicella, the home of Amarones. The Viviani family has been running the winery for several years; the working philosophy that has always distinguished them is that of daily exalting the intrinsic characteristics of the terroir and native vines, thanks to techniques that are minimally invasive in the vineyard and respectful of the ecosystem surrounding the vineyards. Important, too, is the use of modern technologies so that the final product is its maximum expression.

Cantina Viviani's Amarone Classico vineyards are developed in climates that are ideal for the birth of vines: warm breezes from Lake Garda that meet the cooler air of the Alps, which protect the valley from the north create the ideal microclimate for withering to occur in the gradual fruit lofts between autumn and winter. The soil is medium-textured with good limestone and consistent presence of stones and pebbles, ideal for rainwater to penetrate, ensuring thriving and welcoming soil for vine roots. Harvesting is done manually and the best grapes are selected in special boxes called plateaux; in the cellar they are dried in rooms called fruttai, where they stay for 3-4 months. When the right concentration is reached, they are softly crushed with rubber rollers and then alcoholic fermentation with indigenous yeasts begins. It macerates on the skins 40 days with constant pumping over and rests in wood for 40 months.

To the eye, Cantina Viviani's Amarone Classico is an impenetrable ruby red with intense reflections. The bouquet of aromas is reminiscent of wild blackberry, ripe plum and on the finish pleasant balsamic notes; in the mouth it is structured, elegant and enveloping with lively tannins and long persistence for an interesting drink. It pairs perfectly with grilled cuts of red meat, game and pasta dishes dressed with important sauces; also perfect with aged cow's milk cheeses. Excellent for the holiday table and family celebrations, to enjoy a traditional product that has genuine and authentic flavors in it.
