The fermentation in amphora gives great clarity and enhances the typical scents of this white grape, such as aromaticity and sapidity. The nose has evident floral scents, then more intense notes of almond and quince, while the finish reveals hints of fennel and Mandarin. To the palate it is equally complex: almost salty and fresh, persistent but also round, with a slight effervescence that tickles the palate. Good for cooling off during a hot afternoon or great to accompany fish appetizers
The Spanish bodega Loxarel Vitivinicultors presents the Ancestral a Pèl ‘Amfora Sense Sulfits Afegits’, a sparkling white wine that makes authentic genuineness its cornerstone. It is a label from Catalonia made from pure Xarel-lo grapes, an indigenous white grape variety that is emblematic for the winery, from which the name Loxarel is derived. The estate has embraced the principles of organic farming since 2000, and then fully converted to biodynamics, becoming part of the Terra Dinamica group, the only Catalan association that brings together biodynamic farmers. As can be inferred, the Catalan expression “amfora sense sulfits afegits” translates to “amphora without added sulfites”, highlighting the production process behind this bottle.
Ancestral a Pèl Loxarel ‘Amfora Sense Sulfits Afegits’ is a 100% Xarel-lo cultivated according to the principles of biodynamic agriculture. After manual harvesting, the bunches are transferred to the winery for spontaneous alcoholic fermentation that begins in 1,000-liter terracotta amphorae in contact with the skins. When there is still some sugar left to transform, the mass is then racked, pressed, and bottled for the secondary fermentation according to the Ancestral Method, without the addition of yeasts and exogenous sugars. Throughout the entire processing, no addition of sulfites is made.
The Pét-Nat Ancestral a Pèl ‘Amfora Sense Sulfits Afegits’ by Loxarel has a hazy straw-yellow color tending towards golden. On the nose, aromas of apple, mandarin peel, white flowers, quince, almond, and fennel alternate, while on the palate it is complex, velvety, and well-balanced, with a pleasant freshness that merges with the marked savory character in a long and consistent finish.
