Gerard Villet's Chardonnay is a white wine from the Jura that expresses freshness, finesse and richness. It is made in used barriques of different passages, voluntarily left full. The result is a very territorial and spontaneous interpretation, with a strong mineral accent and a marked freshness, surrounded by notes of dried fruit, citrus, spices and ripe yellow fruit

Arbois Chardonnay is produced by Gerard Villet in the ouillé style, meaning without oxidation or the formation of voile: the barrels in which the aging period takes place are kept constantly full, in order to avoid contact of the wine with oxygen. A Chardonnay that fits precisely into the great winemaking tradition of Jura, a region too often left on the margins of French enological considerations, but which is discovering a fortunate period of rediscovery.

Gerard Villet makes his Arbois Chardonnay by vinifying in purity the grapes from old vines that have reached the age of 50 years, planted by Christine's father in the 1970s, and cultivated according to the requirements of organic certification, a cultural approach that the Domaine has pursued since 1988. The vineyards are scattered around the village of Arbois, on soils characterized by a clay cover above the layer of limestone rock and present the most disparate exposures, following the twisted lines of the slopes that rise here between 300 and 400 meters above sea level. The harvest manual harvest is completed at the moment of perfect ripeness of the grapes and the vinification takes place in a traditional manner without oxidation. The spontaneous alcoholic fermentation is conducted by the only indigenous yeasts in stainless steel tanks, while the aging occurs in used oak barriques kept full.

Arbois Chardonnay by Gerard Villet presents itself bright in the glass, with a vivid golden yellow color and straw-yellow reflections. The nose immediately offers a dense complexity, announced by notes of aromatic herbs and citrus. Gradually, enveloping hints of sweet spices and a recall to nuts emerge, with a well marked background of rocky sensations. The tasting is indeed decidedly mineral: a persistent saline trail supports a rich sip endowed with a certain softness, integrated by a vein of airy freshness. An authentic interpretation with great territorial taste, for a Chardonnay that can well accompany medium-aged blue cheeses, poultry in fricassee, and vegetable quiches.
