The “Besiosa” is a lively, easy-drinking, and refreshing interpretation of the Emilian land. It is a sparkling white wine, which only carries the name white, given the skin maceration that gives it an orange hue, and showcases a profile focused on purity and the simplicity of drinking that makes one fall in love with the world of bottle refermented wines. This is certainly thanks to the work of Marco Rizzardi, at the helm of the Crocizia winery, who over 15 years ago took a small untouched plot of land from the woods of the Parma hills to plant, according to the principles of sustainable agriculture, the vines of the ancient tradition of Emilia. Thus, every year from this small patch of land, which connects the mountain to the hill, come forth straightforward and pure labels, juices of the territory with irresistible drinkability. Besiosa, as the name suggests, embodies the most spontaneous, cheerful, and lively soul of the winery.
Crocizia Besiosa is born from white grapes grown at 500 meters above sea level, at the point where the mountain embraces the hills. In this small strip of land, hidden by woods, orchards, and the local nature, the grapes mature undisturbed. The bunches are hand-picked and brought to the winery, where the process continues in the most natural and spontaneous way possible. Fermentation takes place in steel tanks through the action of indigenous yeasts naturally present on the skin, and the maceration, which lasts just over 10 days, serves to return all the aromatic baggage of the variety and a caressing touch of tannins. It is bottled with a light sugar dose so that, when the hottest season arrives, it referments autonomously, giving rise to that much-appreciated bubble.
