'La Damigella' Sparkling White from the artisanal winery Podere Cervarola is a lively and refreshing Emilia Ancestral Method, resulting from a blend of three native grape varieties: Trebbiano Modenese, Trebbiano di Spagna, and Occhio di Gatto. The first variety, present in a predominant measure, is characterized by balance and pleasantness; the second, also known as Trebbianina, stands out for its sweet and floral profile; finally, Occhio di Gatto is appreciated for its characteristic, almost aromatic scent. Besides its viticultural aspect, the importance of Trebbiano Modenese and Trebbiano di Spagna is attributed to their use in the production of Traditional Balsamic Vinegar of Modena.
Podere Cervarola 'La Damigella' Sparkling White is made from a blend of Trebbiano Modenese (75%), Trebbiano di Spagna (20%), and Occhio di Gatto (5%). The processing method involves the classic white winemaking for Trebbiano Modenese and Occhio di Gatto, while Trebbiano di Spagna is macreated for 15 days on the skins. The maturation takes place in cement tanks while the refermentation occurs in the bottle according to the Ancestral Method, using frozen must as a source of sugars.
