The Buttafuoco Historic “Vigna Pregana” by Quaquarini is an austere wine, capable of aging. The ‘historic’ indicates the high quality of the wine in the denomination, a recent regulation aimed at maximizing this Pavia excellence. On the nose, we perceive cherries, plums, sweet spices, and mineral hints, while on the palate it presents great structure, with a dynamic character and very warm. A wine to pair with great blue cheeses  

The Buttafuoco Storico ‘Vigna Pregana’ from the Pavia winery Francesco Quaquarini is a remarkable interpretation of extraordinary typicity that faithfully reflects the characteristics of the Buttafuoco denomination of Oltrepò Pavese. The Buttafuoco Storico Club was founded by a group of local producers with the intention of protecting and enhancing the historically and traditionally most suited area for the production of this red wine, also imposing a more restrictive disciplinary. Among these producers is also the family-run winery Quaquarini, a guardian of the territory and its traditions for over a century.

Quaquarini Buttafuoco Storico ‘Vigna Pregana’ consists of a blend of Croatina (50%), Barbera (35%) and Ughetta di Canneto (15%), varieties grown under certified organic farming on predominantly clayey soils, with a simultaneous presence of silt and limestone. The vines were planted in 1986 within the Vigna Pregana, a plot located at 260 meters above sea level between the municipalities of Castana, Montescano, and Canneto Pavese. The The harvest is carried out by hand with careful selection of the bunches, which are then fermented in stainless steel tanks for alcoholic fermentation, while the subsequent aging period takes place in barriques for 12 months.

The ‘Vigna Pregana’ Buttafuoco Storico by Francesco Quaquarini has a deep ruby red color. On the nose, vivid notes of cherry and plum are perceived, supported by hints of licorice and spices, and mineral notes. The tasting shows itself to be structured, warm, and well-balanced, with pleasant freshness, integrated tannins, and dynamic persistence. Due to its organoleptic attributes, the ‘Vigna Pregana’ pairs excellently with dishes based on various meats and aged cured meats.
