The Cannonau "Mamuthone" by Sedilesu is a red wine coming from the heart of Barbagia, from Mamoiada, a land that over time has become an increasingly important reference point for this extraordinary type of wine. The altitude of 720 meters, the sandy, acidic, and potassium-rich soils, the marked temperature variation, and the low rainfall in spring make this micro environment, almost wild, perfect and unique for the Cannonau vines grown as bush vines. The wines of the Sedilesu family have always had an eye on local tradition, and the Cannonau "Mamuthone", the symbol of the winery, recalls with this nickname the dialectal term for the typical carnival masks of the town.
The winemaking process begins with the arrival of the grapes, meticulously harvested from the vineyard and arriving at the winery in the shortest time possible. The crushing and destemming are gentle, and the must obtained is sent to wooden or steel tanks, depending on the quality of the grapes, where spontaneous fermentation takes place. The maceration of the grapes occurs through pump-overs and punch downs. Before aging in 40-hectoliter oak barrels for 12 months, the wine rests in cement for an intermediate period. Before being bottled, the wine is not filtered, and the total sulfur is a very low and tolerable quantity for everyone.
The Cannonau "Mamuthone" presents itself with a bright ruby red color. On the nose, fruity tones of sour cherries, wild berries, and cherries in spirits are perceived, with hints of wilted roses, eucalyptus, and Mediterranean scrub. On the palate, it is beautifully consistent, with penetrating tannins and an engaging texture, very long and persistent. The great skill of the winery is knowing how to guide the wine towards the best expression of its characteristics, without being too extravagant, but remaining elegant and unusually fresh. The Cannonau from Sedilesu is lively and authentic, and we love it for this!
