Artisanal"Aurora" is a Carricante from Etna with a straightforward, vibrant, and mineral sip, nuanced by a small addition of Minnella grapes, named after the Alba butterfly, native to the great volcano, which is at risk of extinction. The olfactory profile is delicate and intriguing: aromatic herbs, white flowers, mineral nuances, citrus, peach, and balsamic hints. The sip is rich and round, tonic and savory, with intense minerality and freshness.
I Vigneri's Carricante "Aurora" is a wine with a vibrant and forthright sip, as taut as the character of Etna, that has protected the estate's vineyards for years and is ready to explode all its aromas once it meets the palate. Made almost entirely from Carricante, in "Aurora", we find a very small percentage of Minnella, an indigenous grape named after a butterfly that lives in this area and is faithfully represented on the label.
"Aurora" Carricante de I Vigneri sees its vineyards on volcanic terraces. Given the imposing influence of the volcano, there are strong temperature swings between night and day that allow a deep and broad development of the aromas of the bush-trained grapes. Once the grapes have been harvested exclusively by hand, spontaneous fermentation takes place in steel vats using only indigenous yeasts. Once this phase is complete, the wine is decanted into vats similar to those used for fermentation and left to refine for a few months.
The I Vigneri winery with their Carricante 'Aurora' gives us a wine that presents itself to the glass with a straw yellow colour with golden reflections. The olfactory profile is delicate and intriguing: grapefruit and peach combine with jasmine and thyme to create a nose of fine elegance surrounded by mineral reflections and balsamic traits that are decisive and proud. Intense minerality and freshness are the two characteristics that strike us when we enjoy the first sip, which is also tonic and rounded with a slight savoury hint. "Aurora" is an interpretation of Carricante, daughter of Etna, a wine that is moving when accompanied by focaccia cunzate with oil, oregano and salt... a simple pairing, but as Tolstoy used to say, "there is no greatness where there is not simplicity, goodness and truth".
