The 'Cuvée Viviana' by Valdo is a Cartizze Superiore Dry that comes from vineyards located right in the Cartizze area, facing south and situated at an altitude of about 300-400 meters above sea level. The Glera grapes grow in a predominantly clayey subsoil, characterized by a rocky background, and are hand-picked between the end of September and the beginning of October. The grapes are gently pressed, followed by a light cryomaceration. The fermentation of the must in steel, while the refermentation – following the principles of the Metodo Martinotti – takes place in autoclave with the sparkling process; the Cartizze remains on the lees for 5 months, and after bottling, before marketing, it matures for three months directly in glass.
The Cartizze Superiore Dry 'Cuvée Viviana' Valdo presents itself to the eye with a straw yellow color; the foam that forms in the glass appears fine and the perlage is subtle and persistent. The nose is pervaded by typically varietal sensations, where white-fleshed fruit alternates with citrus and sensations that evoke flowers more; in the finish, there are also hints of yeast and pastry. On the palate, it has a light body, with a fresh foam that makes the sip crunchy and pleasantly smooth. A label that tells the story of a 'grand cru' ideal for aperitif time or after dinner, when anticipating dessert moments.
