"Cavofiolis" is a red wine with body and warmth that is made in the south of France, in Roussillon, from two local varieties, Carignan and Lledoner Pelat. A long maceration on the skins with a vinification and aging in barrique give light to an expression of good intensity and great Mediterranean richness, enveloped by hints of morello cherry, black cherry, aromatic herbs, sweet spices, roasting and cocoa

“Cavofiolis” from the winery La Cave Aux Fioles is a typically Mediterranean red and represents an extremely personal interpretation of a fiery, rocky, and simultaneously marine terroir like that of Languedoc, the hottest and sunniest part of France. The name of this red and even more the label are a tribute to the cinematic art of Fritz Lang and his immortal masterpiece “Metropolis”: the denunciation of a world where the machine gradually replaces the human being seems to be precisely the message captured by the mad vigneron Carlos Badia, who loves to work solely with natural elements and create wines that speak of the land from which they come.

La Cave Aux Fioles produces its “Cavofiolis” from two typical varieties of the French Midi: Carignan, an indigenous grape that has managed to colonize the entire Mediterranean; Lledoner Pelut, a sporadic mutation of Grenache Noir, which retains its aromatic characteristics but, presenting greater vigor and rusticity, must be contained in the harvests. This last point does not seem to be a problem for Carlos, as he produces on average only 12 hectoliters per hectare from his vineyards. The old vines are trained as bush vines and in some cases reach a century of age: they reside on soils characterized by a calcareous matrix and covered by a clay layer, on the heights just north of Perpignan, in the department of Pyrénées Orientales. The harvest is done by hand at full ripeness and in the winery the grapes are still pressed by hand using a small vertical press. The fermentation in barrique is carried out by only wild yeasts spontaneously and without any type of correction the wine is always left to age in barrique for several months.

“Cavofiolis” by La Cave Aux Fioles wears an intense garnet color, with a very dense appearance. The spectrum of aromas is broad, the bouquet complex and initially characterized by notes of sour cherry and Mediterranean herbs, then revealing spicy and toasted aromas, which suggest chocolate.
