The Chablis by Pommier is a dry white produced in the Chablis region, one of the world’s homelands of Chardonnay. This ‘domaine’ works diligently to return a typical expression of the area, following organic principles with which it aims to best express its great terroir. On the nose, it presents fruity aromas of green apple and citrus, with the distinctive mineral note of Chablis, reminiscent of chalk. On the palate, it is round, with great aromaticity and very pleasant freshness. Ideal with semi-aged cheeses or fish dishes with delicate sauces.

The Chablis from Domaine Isabelle et Denis Pommier is the flagship label of the range, which very well expresses the style of the winery and the unique and inimitable characteristics of the great whites from this famous Appellation of Burgundy. It is a fragrant pure Chardonnay characterized by a clear mineral freshness, born from a selection of different particularly suited plots. Thanks to the different and complementary peculiarities of each vineyard, the wine expresses a perfect balance and offers a harmonious, refined, and elegant sip. At the table, it pairs very well with baked fish, delicate white meats, or a platter of creamy cheeses.

The Chablis wine is the result of the work of a couple of passionate winemakers. Domaine Isabelle et Denis Pommier is an artisanal estate founded in 1990, with the aim of enhancing the family vineyards. The property has plots in the denominations of Petit Chablis, Chablis, and some prestigious Premier Cru. The soils composed of limestone, clay-limestone marls, are of ancient marine origin and are rich in fossils.The climate is very cool and characterized by significant temperature excursions. In these particular pedoclimatic conditions, Chardonnay produces whites of unparalleled finesse. The grapes come from 25-year-old vines located on Kimmeridgian soils in the municipality of Chablis and Portlandian soils in the municipality of Ligny-le-Châtel, all managed under organic farming. After soft pressing, the must ferments spontaneously with indigenous yeasts. The wine matures for several months in steel tanks, also undergoing malolactic fermentation.

The white Chablis from Domaine Isabelle et Denis Pommier is a bright and vibrant wine, with a smooth sip, clear and immediately pleasant to drink. Perfect to taste young, it has a aging potential of 5 or 6 years. Of a beautiful yellow color with bright golden reflections, the wine seduces with aromas of white flowers, citrus fragrances of lime zest, grapefruit, green apple, peach, hints of iodine and slight mineral sensations of wet stone. On the palate, it is harmonious, with ripe and crunchy fruit.traversed by a savory trail leading to a long and lively fresh finish.
