It has aromas of pear and green apple pulp, vanilla, and pastry, with balsamic and refreshing hints of anise, while on the palate it is balanced with crystalline freshness, savoriness, and minerality, with a persistent fruity finish.
The Chablis Premier Cru Vaillons by Louis Moreau is the label created to enhance the characteristics of this precious cru, located on the left bank of the Serein river, right in front of the prestigious area occupied by the Grand Cru of the Appellation. It comes from vines that always ensure an excellent level of grape ripening, capable of giving rich and intense aromas. The charm of the wine lies in the perfect balance between the crisp mineral freshness, typical of northern Chardonnay, and the notes of ripe and expressive fruit. Smooth, intense, and deep, thanks to a long aging in steel, it enhances the varietal typicity of the great northern Burgundy Chardonnay.
The Premier Cru Vaillons Chablis is the result of over a century of experience and deep knowledge of the territory. An extraordinary raw material and great care in the vineyard allow for the production of an excellent Chardonnay. The grapes come from a 4-hectare plot located within the Premier Cru Vaillons, with a southwest exposure. It is an old vineyard planted in 1945 on very suitable soils, consisting of limestone marls, which produce few perfectly ripe bunches with very intense and concentrated aromas. Fermentation takes place in stainless steel tanks at a controlled temperature of 18 °C, with indigenous yeasts and a duration of about 15-18 days. After the malolactic fermentation and a light filtration, the wine matures on the fine lees for at least a year before being bottled.
The Premier Cru Vaillons by Louis Moreau is a Chablis with an intense face and generous fruit, which well represents the character of this famous area of the Appellation. In appearance, it presents a light yellow color with brilliant golden reflections. The olfactory profile is rich and intense, with fragrant aromas of white-fleshed fruit, floral nuances, balsamic hints, iodine and mineral sensations. On the palate, it is full-bodied, elegant, and smooth, with a satisfying and rich fruit that leads harmoniously to a savory and very fresh finish. A great white, perfect for a seafood dinner. Also to be tried with a platter of fresh cheeses.
