Vincent Wengier's Chablis is a wine made from fine Chardonnay, grown on the limestone-rich hillsides of this northern corner of Burgundy. It ferments slowly in steel to preserve all its aromatic freshness. On the nose, floral and paved grass hints are immediately evident, some slight hints of citrus fruits and then butter.very elegant on the palate, it is drinkable but thanks to its good structure it can be excellently paired with white meats, such as a chicken roll

The Chablis signed by Vincent Wengier represents a typically mineral expression of this prestigious area of northern Burgundy. Vincent represents the fourth generation of the Wengier family dedicated to wine production, with the business located in the municipality of Préhy, south of the village of Chablis. Here Vincent, along with his wife Sophie, began bottling and marketing the first labels under his own name only in 2018, elevating the family tradition, involved in viticulture since 1950. In the production vision embraced by the couple, the health of the environment plays a primary role, a value pursued through sustainable agronomic practices, evidenced by the HVE certification obtained in 2019 and the organic certification starting from the 2023 harvest.

The Chablis of Vincent Wengier is made from only Chardonnay grapes coming from vines with an average age of 40 years cultivated in respect of the environment following the principles of organic farming. The plants rest on hilly soils of clay-limestone origin, characterized by slopes reaching up to to 40% and the typical Kimmeridge subsoil, rich in marine fossil remains. Following the harvest, carried out with the aid of cutting-edge harvesting machines, the bunches are gently pressed, with the must obtained being placed to decant before the slow alcoholic fermentation of about a month in stainless steel tanks. The malolactic fermentation and the subsequent maturation phase of a few months on the fine lees also take place in steel at controlled temperature.

The color of the Chablis signed by Vincent Wengier is pale straw yellow with delicate greenish hues. The nose expresses intense notes of white flowers such as jasmine and artemisia, enriched by subtle hints of peach, lemon, and wet stone. The taste has good structure but is also easy-drinking thanks to the pronounced freshness that enhances the persistent savory-mineral finish.
