The Brut Grand Cru “Bastien Thomas” from Maison Pierre Boever is a Champagne produced with a classic blend of Chardonnay and Pinot Noir and a minimum aging on the lees of 36 months. We are in the Montagne de Reims area, the homeland of Pinot Noir and a territory where Chardonnay also expresses itself with intense characteristics. The bouquet expresses citrus and fruity aromas, accompanied by classic notes of bread crust. The sip has a good structure, it is deep and persistent with a finish of lively freshness.
The Champagne Brut “Bastien Thomas” is produced by the small Maison Pierre Boever located in Tauxières, in the famous Montagne de Reims area. The Maison manages 5 hectares of owned vineyards in particularly prestigious areas, many of which are classified as Grand Cru. The grapes come exclusively from the best vineyards of the estate, cultivated with Chardonnay and Pinot Noir in parcels classified as Grand Cru in Louvois, Bouzy, and Ay. The individual vineyards are vinified separately with fermentation in steel, followed by malolactic fermentation. The base wines are age for a few months in steel, until the moment of creating the cuvée. The second fermentation takes place in the bottle, according to the Méthode Champenoise, with a resting on the fine lees of at least 36 months before disgorgement.
The Grand Cru “Bastien Thomas” is a Champagne of beautiful fabric, which perfectly reflects the rich and intense character of the Pinot Noir and Chardonnay from the Montagne de Reims area. The color is golden yellow, bright and luminous, marked by a fine and persistent perlage. On the nose, it expresses citrus aromas with notes of lime, more mature and soft aromas of yellow fruit, accompanied by classic slightly toasted hints of bread crust and dried fruit. On the palate, it has a good structure, with intense, persistent fruity aromas and a very fresh and savory finish.
