The Blanc de Blancs "Cuvée S" is among the most legendary and historic labels of the Champagne region. A true oenological monument, made only in the best vintages from a single grape variety, Chardonnay, sourced from a single cru, Le Mesnil-sur-Oger. The very long aging on the lees for over 10 years allows for a slow evolution, resulting in a golden color with extremely fine and persistent bubbles, characterized by a structured, refined, deep and creamy sip, with driving freshness and excellent tension, and an elegant and complex bouquet, made of notes of toasted bread, orange oil, brioche, hazelnuts, yellow flowers and candied ginger.

The Champagne Blanc de Blancs Brut “Cuvée S” Salon is a legendary label for all lovers of great Champagne. Salon represents the absolute excellence of a Maison that has managed to maintain artisanal care, based on a rigorous savoir-faire without compromises. It is the representation of the quest for purity and essentiality: a single grape variety, Chardonnay, a single terroir, the Côte des Blancs, a single Grand Cru of Mesnil-sur-Oger, and a single vintage. Simple choices, firmly maintained over the years, have contributed to building the worldwide fame of one of the most sought-after and refined Maisons.

The “Cuvée S” is a Champagne Blanc de Blancs Brut created by a Maison that has been producing high-end vintages since 1905, initially only for pleasure and personal consumption, and only from 1920 marketed among the most discerning connoisseurs and collectors. Today Salon is part of the Delamotte group, but has preserved its identity and its vocation for excellence. The Chardonnay grapes come from a parcel of one hectare “le Jardin Salon” and from another 19 small vineyards cultivated in the territory of the Grand Cru of Mesnil-sur-Oger, located in the most prestigious area above the church of the small village. The grapes are carefully selected before being sent for soft pressing. The must is started for white vinification and the vins clairs, after a few months of aging, are blended to create the final cuvée of the vintage. The second fermentation takes place in the bottle according to the Champenoise Method, with a period of aging on the lees of 11 years.
