"Equilibre" is the new label that Cindy Malot, the new generation of the Sadi Malot winery, has chosen to replace the old name of 50/50. It is a Champagne that is actually made up of two halves of Chardonnay and Pinot Noir, from the territory of the Montagne de Reims: a region that common belief would consider suitable only for black grapes, but which is actually also very valid for white grapes. The Malot family pursues a certified Haut Valeur Enviromental cultural approach and is in the process of converting all their owned vineyards to organic farming.
The grapes that give life to the "Equilibre" cuvée of the Sadi Malot winery come from the vineyards of two different villages: the 50% part of Chardonnay from Villers-Marmery, classified as Premier Cru, while the 50% part of Pinot Noir from Verzy, classified as Grand Cru. The blend also includes the use of about 35% reserve wines, aged in steel and aged with the solera method started in 1982: about one third of the mass is renewed every year with the wines of the vintage. The first fermentation starts with selected yeasts in steel tanks, containers in which the malolactic fermentation also takes place completely. The second fermentation takes place in the bottle, according to the classic rule of the Champenoise method, and the aging on the lees lasts for 24 months. The final dosage falls into the Brut category, with residual sugars at 9 grams/liter, and bottling is done without prior clarification.
The "Equilibre" cuvée vinified by Sadi Malot has a festive visual impact: a white gold color made lively by generous effervescence and the formation of a beautiful white foam. The clear and decisive aromas impact on the nuances of white fruit, golden apple and ripe pear first and foremost, and also on sweet floral notes, such as spring lime tree and summer osmanthus. There are subtle and soft references to the bakery and white bread crumb. The taste is equally soft, with creamy butter sensations, in a frame that remains always tonic and very fresh. A Champagne for every occasion: from aperitif snacks to seafood pasta dishes and white fish soups.
