The Champagne Brut Tradition Ghislain Payer et Fille is a traditional sparkling wine, as the name implies, but not at all simple. The nose has intense aromas of citrus, but also evolved notes of figs, toasted hints of hazelnut and almond ... a complexity that reappears on the palate. The attack in the mouth is fresh, of persistent aromaticity, the bubble is creamy and on the finish there is a fine savory sensation. The Champagne house Ghislain Payer et Fille presents the Champagne Brut ‘Tradition’, a label that effectively expresses the style of the winery. The headquarters of this Récoltant Manipulant is located in the village of Fleury-la-Rivière, in the Vallée de la Marne, between the famous municipalities of Reims and Epernay. Since as early as 1854, the Payer family has been dedicated to viticulture in this area, while in 1962 the family was one of the 24 founders of the Cooperative Régionale des Vins de Champagne. The vineyards are spread over about twenty different plots, predominantly planted with Chardonnay and Meunier, with a smaller percentage of Pinot Noir.

Ghislain Payer et Fille Brut ‘Tradition’ Champagne is produced from a blend of Pinot Meunier (63%), Chardonnay (27%), and Pinot Noir (10%), varieties grown on calcareous and gypsum-rich soils abundant in marine fossils. The grapes are hand-picked and then carefully selected, before being subjected to soft pressing. The must obtained is then vinified in stainless steel tanks inox, where it rests for a few months before the second fermentation that occurs in the bottle according to the Champenoise Method. The liquid remains in aging on the lees in glass for at least 36 months before the dégorgement and the subsequent Brut dosage, with 7 g/l of residual sugars.

 In appearance, the ‘Tradition’ Brut Champagne by Ghislain Payer et Fille shows a straw yellow color with delicate golden hues, with fine and persistent effervescence. On the nose, scents of orange peel and lemon alternate with figs, combined with mineral hints and notes of dried fruit such as hazelnut and almond. The tasting is fresh, aromatic, and persistent, with a beautiful creaminess that is accompanied by a fine savory finish.
