CHAMPAGNE BRUT GRAND CRU 'DES DAMES DE FRANCE' BOEVER A&S DESCRIPTION

The Champagne Brut Grand Cru "Des Dames de France" by Boever A&S was born in a small village in the Montaigne de Reims area: Tauxiéres, considered a 'grand cru'. The winery is family-run and the working philosophy is geared towards enhancing the terroir and the intrinsic qualities of the raw material, producing wines with a distinct and complete personality. The idea is to fully respect the natural phases of growth and development of the plants and the raw material, favouring integrated pest management, grassing, in order to give fertility to the soil.

The vineyards of Boever A&S's Champagne Brut Grand Cru "Des Dames de France" grow in the hamlets of Louvois and Bouzy on soil predominantly composed of chalk and limestone, ideal for the final Champagne to have a strong character and personality. The climate is continental with hot, sultry summers and cold winters, often affected by snowfall. The grapes are harvested manually around the first few days of September. In the cellar, the alcoholic fermentation and malolactic fermentation take place in stainless steel, after which the cuvée is created by blending the best base wines of Pinot Noir and Chardonnay. This is followed by fermentation and maturation on the lees for 42 months. It re-ferments in the bottle according to the dictates of the Classic Method.

To the eye, Champagne Brut Grand Cru "Des Dames de France" from Boever A&S appears golden yellow with brilliant reflections and a fine, persistent perlage. The bouquet is reminiscent of citrus, jammy and white-fleshed peach aromas in combination with the classic finish of freshly baked bread crust; in the mouth it is powerful, enveloping and structured with an important length that makes the drink curious. Perfect with shellfish, molluscs and the renowned oysters; also interesting with elaborately cooked white meats such as poultry. Perfect to accompany formal aperitifs or family celebrations on anniversaries and anniversaries, enjoying in the glass all the goodness of one of the world's most famous wine regions.
