The Champagne Extra Brut "Louis Aristide Réserve Perpétuelle" by Rémy Massin is a cuvée that highlights both the House's style, based on long ageing and the quest for complexity, and the extraordinary structure and aromatic richness of the Côte de Bar and its Pinot Noir. In this area of Champagne, in fact, the noble red grape variety has found the limestone-clay soils and sunny climate that allow it to ripen fully and perfectly. It is a bottle with a typically gastronomic vocation, to be enjoyed at dinner with tasty baked fish, with noble poultry on the spit or with roast white meats.

"Louis Aristide Réserve Perpétuelle" is an Extra Brut Champagne that illustrates the value of the work of a talented vigneron. Rémy Massin runs an estate of 22 hectares and produces Champagnes of great personality, marked by an intense and elegant character. The Pinot Noir grapes come from a selection of old vines, which produce a few bunches per plant of excellent quality. After soft pressing, the must is vinified in white. After several months of ageing and after malolactic fermentation, the blend is created, which in addition to the vins clairs of the vintage includes reserve wines from the previous 18 vintages, giving the cuvée an extraordinary complexity and depth of flavour. The second fermentation takes place in the bottle according to the Champenoise Method, with a resting period of at least 6 years on the lattes before dégorgement.

The Champagne Extra Brut "Louis Aristide Réserve Perpétuelle" is a Rémy Massin's wine of great charm, captivating with an elegant aromatic palette. In the glass, it has a beautiful luminous and brilliant golden colour, enhanced by a perlage of great finesse and persistence. The olfactory picture is intense and complex, characterised by aromas of ripe yellow fruit, tangerine and bitter orange peel, notes of fresh almonds, floral nuances of lime blossom, sensations of bread crust and dried fruit. The palate is rich and finely multifaceted, with soft, ripe aromas that find a perfect gustatory balance in a savoury vein and a finish of clear mineral freshness.
