The Extra Brut Champagne ‘Cuvée Symbiose’ by Minière F&R is a complex vintage that reflects the precision philosophy of the producers, Frédéric and Rodolphe, both in the vineyard and in the cellar. After the alcoholic fermentation, conducted with indigenous yeasts, Chardonnay and Pinot Noir age for 8 months in old oak barrels that are up to 10 years old. Malolactic fermentation is not carried out to preserve the freshness of the sip, which is balanced by the long aging of 9 years on the lees. On the nose, it expresses itself with white flowers, light-fleshed fruit, and clear hints of yeast. On the palate, the attack is direct, with great mineral tension and a long, clean finish. It pairs well with a sole fillet in butter
