The Récoltant Manipulant Patrice Guay presents the Champagne Extra Brut ‘Mont Aulin’, one of the producer's most prestigious labels, a pure expression of Pinot Meunier from the Vallée de la Marne. Pinot Meunier, often simply identified as Meunier, represents one of the three classic champenoise varieties, alongside Chardonnay and Pinot Noir. This grape variety was first mentioned in the 16th century and owes its name, which literally means “miller”, to the characteristic floury white appearance of the underside of the leaves. Meunier reaches its highest qualitative expression precisely in the area of the Vallée de la Marne, where it is often reserved for the coolest exposures.
The Champagne ‘Mont Aulin’ Extra Brut by Patrice Guay is an expression of pure Pinot Meunier grapes cultivated sustainably within the Mont Aulin parcel. Once the ideal ripening stage is reached, the bunches are hand-harvested and then transferred to the wineryfor soft pressing followed by alcoholic fermentation of the must in temperature-controlled stainless steel tanks, with complete malolactic fermentation also taking place. After a few months of rest, the sparkling base is bottled with the addition of liqueur de tirage to create the sparkling effect in glass according to the Champenoise Method. The sur lie aging in the bottle lasts for at least 48 months and the sparkling wine is finally subjected to degorgement and dosage Extra Brut.
The Champagne ‘Mont Aulin’ Patrice Guay Extra Brut shows a straw yellow color with golden highlights and elegant perlage. Aromas of herbs, citrus, and dried fruit follow one another on the nose, combined with mineral and bakery notes. The taste is fresh and rather structured, with refined persistence.
