The Champagne Extra Brut Grand Cru Millesime Mailly is a prestigious Metodo Champenoise that impresses with its refined and deep style. Mailly represents the smallest and most appreciated cooperative winery in all of Champagne, having become famous for the extremely high quality of its sparkling wines. The contributing members work all Grand Cru vineyards in the only homonymous village of Mailly, located in the Montagne de Reims area, the homeland of Pinot Noir. The Extra Brut Millesime is part of the 'Composition Parcellaire' selection, consisting of Champagnes that arise from a blend of grapes coming from all 35 lieux-dits cultivated by the estate.
The Champagne Grand Cru Extra Brut Millesime from Mailly consists of a blend of Pinot Noir (75%) and Chardonnay (25%) grapes grown in the Grand Cru village of Mailly on soils composed of a gypsum subsoil. Following manual harvesting, the bunches are gently pressed whole, with the must obtained undergoing alcoholic and malolactic fermentation at low temperatures between stainless steel tanks and wooden barrels.wood. After a few months, the sparkling base is then bottled with the addition of liqueur de tirage for the second fermentation in the bottle according to the Metodo Champenoise. The aging on the lees lasts for several years and takes place in fascinating underground caves carved into the gypsum. After this period, the process finally proceeds with disgorgement and subsequent Extra Brut dosage, with a residual sugar content between 2 and 3 g/l.
The Champagne Mailly Millesime Grand Cru Extra Brut is a bright straw yellow color with golden reflections and elegant perlage. The aromatic bouquet denotes scents of white-fleshed fruit, citrus, and subtle hints of spices and bread crust. The tasting, rich and full, highlights great depth and freshness, as well as a persistent finish characterized by a slight minerality.
