The Educato by Elio Grasso is an elegant expression of Chardonnay that combines minerality and softness, also thanks to its aging in small wood. Monforte d'Alba, the land of Barolo, which Elio Grasso first, and now his son Gianluca have been able to preserve and enhance, primarily highlighting the local indigenous grape varieties with the addition of a small planting of Chardonnay. In the vineyard, the work is absolutely respectful of nature, therefore chemical products are banned and only copper and sulfur are used. 18 hectares of vineyards but also 20 hectares of woods and meadows, with a constant eye on biodiversity and the balance of various plant species. Liquids that become interpreters of vintage and territory, with a production that stands around 100,000 bottles and that every year showcases the great qualitative work done by the Grasso family.
“Educato" comes from pure Chardonnay grapes grown entirely in the Monforte d'Alba area. The Grasso family was one of the first to believe in the potential of Chardonnay grown in Langa, so much so that the firstvintage dates back to 1990. The decision to vinify the various vineyards separately means that the grapes used to produce the liquid come from a single vineyard of 1 hectare, which rests on a calcareous-sandy soil and has an east-southeast exposure. A Burgundian interpretation of the famous white grape variety, in fact after a careful selection of the bunches, fermentation and aging take place in barriques.
