The Chardonnay-Savagnin 'Les Molates' by Eric Thill is a vibrant expression of Jura, born from the blend of the two grape varieties in the prestigious Lieu-dit that gives the wine its name. This French term identifies a single cadastral plot historically known for its peculiar characteristics; it is essentially a specific cru that gives the wine a unique and unreplicable territorial identity. Grown on yellow and blue marls, the grapes ferment with only indigenous yeasts and then age for 8 months on the fine lees. The result is a white wine of great character, with a bouquet rich in fruity, floral notes and distinct iodine mineral hints. On the palate, the imposing structure and softness of Chardonnay meet the sapidity of Savagnin, offering a deep, balanced sip with admirable persistence. It pairs well with a porcini mushroom risotto and Comté.
