Monte Duro ‘ConFerma!’ is characterized as a white macerated wine of exceptional smoothness and gustative dynamism, made according to a truly sustainable production approach. Among the native varieties cultivated by the family-run winery Monte Duro, located in Vezzano sul Crostolo, in the province of Reggio Emilia, the Spergola stands out, a white grape variety that gives rise to wines with fresh and light aromas, particularly suitable for sparkling wine production as well. For a long time, Spergola was confused with the international grape variety Sauvignon Blanc, although it shows evident ampelographic and cultural differences.
The ‘ConFerma!’ of Monte Duro is born from only white grapes grown under certified organic conditions with low yields. Once the grapes have reached the ideal stage of ripeness, hand harvesting in crates is carried out, followed by spontaneous alcoholic fermentation carried out by indigenous yeasts and associated with 2-3 days of skin maceration. Throughout the entire processing, the use of additives and enological aids, including sulfites, is strictly excluded.
