L'Enosi is a white wine of great aromatic and taste grace, born from Riesling and Sauvignon grown in South Tyrol. Juicy hints of peach and tropical fruit follow in a soft and engaging aromatic weave, with beautiful minerality and freshness
cool summers affected by frequent rains. The name of the wine "Enosi" comes from the Greek "enosis" which means union and indicates the union of the potential of the territory and the authentic flavors of this land. The harvest usually takes place manually in the first days of September and ends in early October; in the winery, the grapes are pressed whole and then fermented in steel. This is followed by a 12-hour maceration on the skins. It ages in steel and large barrels for 6 months and is bottled at the beginning of May.
The color of Enosi di Baron di Pauli is a bright and intense yellow. The bouquet of aromas recalls gooseberry, white flowers like jasmine, and ripe exotic fruit combined with spicy notes; on the palate, it reveals great structure, elegance, and warmth with intense freshness on the finish for an interesting sip. It is recommended to pair with sushi and sashimi, shellfish and mollusks, and light fried foods; also interesting with fresh cheeses for a delightful end to the meal.
