The Erbaluce di Caluso 'Le Chiusure' from the family-run winery Benito Favaro stands out for its clear mineral character. At the helm of the winery is Camillo Favaro, supported by his father Benito, mother Rosanna, sister Elena, and brother-in-law Claudio, in a close-knit family context that takes care of less than 4 hectares of vineyards located in Piverone, on the Serra d’Ivrea, the largest morainic relief in all of Europe. The Erbaluce represents the symbolic grape variety of the estate and 'Le Chiusure' was the first label produced by the Favaro family.
Benito Favaro Erbaluce di Caluso 'Le Chiusure' is a pure Erbaluce from vines trained in the Canavese pergola on sandy soils rich in pebbles, situated between 350 and 400 meters above sea level. After harvesting, the grapes undergo 24-30 hours of cryomaceration, after which they are softly pressed and the resulting must undergoes alcoholic fermentation. Once the fermentation process is completed, the mass is transferred to wooden barrels for maturation of at least 6 months on the fine lees, a period during which the wine enriches itself with structure and aromas.
In the visual examination, 'Le Chiusure' Erbaluce di Caluso by Benito Favaro expresses a straw yellow color with greenish reflections. The nose begins with fruity notes of papaya, white peach, and apple, followed by hints of citrus and white flowers, nuances of hazelnuts and almonds, as well as distinct mineral puffs. Full and balanced taste progression, endowed with bright freshness and pleasant sapidity. The persistent finish emphasizes floral sensations and dried fruit. An Erbaluce of remarkable refinement that pairs beautifully with creamy risottos or elaborate seafood preparations.
