The ‘Lavico’ Etna Bianco is a pure Carricante characterized by a vibrant fresh-salty component, produced by the extensive wine estate Duca di Salaparuta. The Reina family brings together three historic brands from Sicily: Corvo and Duca di Salaparuta, both founded in 1824, and Florio, born in 1833, establishing itself as the first private wine group on the island. The Duca di Salaparuta winery is located in Casteldaccia, in the province of Palermo, and this estate has identified over the years the most suitable territories for the various grape varieties selected through the zoning method, which consists of studying a specific area, more or less extensive, aimed at its climatic, pedological, and agronomic characterization.
The Etna Bianco ‘Lavico’ Duca di Salaparuta is produced with only Carricante grapes grown on the slopes of Etna on the side of the Alcantara Valley, within the municipality of Castiglione di Sicilia. The soils, of volcanic origin, are located between 600 and 800 meters above sea level. When the grapes have reached the right level of ripeness, manual harvesting in crates is carried out, followed by destemming and crushing operations that precede a short pre-fermentation maceration. After pressing, the must is placed in stainless steel tanks for controlled temperature alcoholic fermentation, followed by 4 months of maturation on fine lees in the same type of wine containers and at least 3 additional months of aging in the bottle before being released on the market.
Duca di Salaparuta Etna Bianco ‘Lavico’ is a bright straw yellow color. On the nose, hints of peach and pineapple emerge combined with iodine and white pepper notes. Good balance on the palate between softness, pronounced freshness, and a lasting salty trail.
