The "Monte Gorna" Etna Bianco from Cantine Nicosia comes from the best vineyards of Catarratto and Carricante of the estate, cultivated on the terraces located on the slopes of Monte Gorna, an ancient extinct volcanic cone, characterized by soils made up of light volcanic sands that are very draining. The vineyards are located at an altitude between 650 and 750 meters above sea level. At the end of the harvest, the best clusters are softly pressed. The free-run must ferments in stainless steel tanks at controlled temperature for about three weeks. The aging process includes aging in steel containers, a brief passage in acacia tonneau, and several months in bottle before being released on the market.
