Firriato's Etna Spumante Blanc de Noir 'Gaudensius' is a sparkling wine born on the northern slope of Etna, and made from the area's iconic grape variety, Nerello Mascalese. The Etna Spumante Blanc de Noir 'Gaudensius' from the important Sicilian producer Firriato is configured as a sparkling wine rich in mineral sensations that recall the volcanic matrix of Etna. This bottle belongs to the 'Etna' collection, a selection from Firriato that encompasses wines produced from grapes coming from the northern slope of the famous volcano. In particular, the Blanc de Noir 'Gaudensius' is made from the black grape variety of choice from this land: Nerello Mascalese.
The 'Gaudensius' Firriato Etna Spumante Blanc de Noir is born in the Cavanera Etnea estate, located within the municipality of Castiglione di Sicilia. The grapes come precisely from the districts of Verzella, Feudo di Mezzo, and Contrada Sant’Antonio – Cottanera, situated at an average altitude of 650 meters above sea level on sandy volcanic soils with high drainage capacity. In the winery, the Nerello Mascalese grapes undergo a soft pressing directed at whole clusters, with the must thus obtained that goesto alcoholic fermentation at controlled temperature. Once ready, the sparkling base is bottled for refermentation according to the Classic Method, associated with over 36 months of aging on the lees during which frequent coup de poignee are performed, a technique that consists of shaking the resting bottles quickly to facilitate the autolysis of the yeast cells, thus enhancing the olfactory complexity.
The Etna Spumante Blanc de Noir 'Gaudensius' from the Firriato winery has a bright straw-yellow color tending towards luminous gold, with fine and persistent bubbles. Intriguing is the aromatic bouquet with its hints of Sicilian citrus, anise, and brioche, combined with mineral suggestions. On the palate, it shows good structure and complexity, with a long and fresh mineral finish that ends sweetly with an almond note.
