Firriato
Firriato, founded in Paceco in 1978 by Salvatore Di Gaetano and Vinzia Novara, is a winery based on the principles of terroir, identity, and Sicilianity. It represents one of the most important realities of Sicilian wine and has significantly contributed to the revival of viticulture on the island, establishing estates in three different territories: the Agro Trapanese, the island of Favignana, and the slopes of Etna. These very different environments allow the company to offer a wide range of wines of excellent quality. The true mission of the winery is to explore the kaleidoscope of the Sicilian agricultural world, enhancing both indigenous grape varieties such as Nero d'Avola, Perricone, Catarratto, Grillo, and Zibibbo, as well as selected international varieties adapted to the Mediterranean climate.
Firriato's agricultural approach is scientific and aimed at sustainable development: the winery has invested in cutting-edge practices that help manage the over 490 hectares according to the principles of certified organic farming. The vineyards extend over diversified lands: from the sunny and clayey hills of Trapanese, to the Calamoni estate in Favignana with its marine breezes and perfect sunlight, up to the Cavanera estate on Etna, where the vines grow between 650 and 950 meters on volcanic soils rich in minerals. Of particular value is the pre-phylloxera vineyard plot, with an average age of over 150 years, a historical testimony to Sicilian viticulture and certified by the University of Palermo.
Firriato has built a virtuous path from grape to bottle, employing cutting-edge techniques applied to fully respect the authenticity of the grapes. The winemaking practices are calibrated to enhance the peculiar characteristics of each grape variety and territory: from the salty and iodine notes of the wines from Favignana, to the minerality and freshness of the wines from Etna, to the structure and complexity of the wines from Trapanese. Through certifications from third-party entities and constant monitoring of production performance, Firriato pursues the mission of translating the authentic heritage and uniqueness of Sicilian territories into the glass.
