DUSA - Diplomatico
The DUSA Distillery is one of the most famous in South America. It is located in Venezuela, in an area specifically chosen for the production of great Rums. The headquarters is at the foot of the imposing peaks of the Andes, from which the crystal-clear waters of the mountain streams flow, perfect for achieving extraordinary purity in the distillates. The facilities are close to the region where excellent quality sugar cane is grown, allowing for the extraction of particularly prized juice and molasses rich in aromas. The origins of the distillery date back to 1959, when Licorerías Unidas S.A, LUSA, owned by Seagram’s International, one of the most important global groups in the sector, was founded. In 2002, the LUSA distillery was purchased by a Venezuelan company and took the name DUSA, Destilerías Unidas S. A.
Destilerías Unidas S. A. has remained faithful to the best tradition of Rum history. At the heart of the production process is a carefully selected raw material. In the sugar cane plantations in the area, about ten different varieties are cultivated, but DUSA has chosen to use mainly three for Rum production, which it considers the best: Romana, Venezuela, and Canal Point. After cutting the plants, the process of extracting molasses and cane juice, particularly rich in sugar and characterized by very intense aromas, begins. For fermentation, molasses is used for the simpler and lighter distillates, while the dense juice is reserved for the creation of the more full-bodied and aromatically complex products, destined to become Aged Rum.
At the end of the fermentation phase, carried out with selected yeasts, distillation takes place. The light and young Rums are processed using column stills, while for the reserves, the traditional copper Pot Still discontinuous stills are still used today. Thanks to an ancient savoir-faire, pure distillates with a fine and elegant profile are obtained. Destilerías Unidas S. A. pays special attention to the aging phase. The Rums mature in the warm Caribbean climate in carefully selected woods. In the cellars, there are barrels previously used for aging American Bourbon, Whisky, and Andalusian wines from Jerez de la Frontera, particularly Oloroso and Pedro Ximénez. At the end of the aging period in wood, the Master Roneri of the Distillery select the best batches to always achieve harmonious and balanced blends.
