Don Fulano is a Mexican distillery specialized in the production of artisanal tequila, born on the highlands of Jalisco and grown in the valleys of Tequila. There are 5 generations of the Fonseca family, owner of Don Fulano, who deal with the cultivation of agave. It was the great-grandfather of the current owners who began to dedicate himself to this activity more than 140 years ago on the highlands of Jalisco. The family’s merit was to be able to combine harmoniously tradition and innovation, enhancing the most qualitative expression of the territory. For a long time the Fonseca family cultivated agave to sell it to local distillers but in the 80s of the last century they managed to acquire the historic distillery La Tequileña, located in the heart of the town of Tequila. At that time, Enrique Fonseca was an expert agave grower but did not know much about the production of tequila and decided to fly to Europe to learn the art of distillation in France and Scotland. Here, Enrique was fascinated by the process of maturing distillates and took advantage of what he learned to apply it to his own tequila.
At the base of the production of tequila Don Fulano are only three ingredients: ripe agave of the varieties Maduro and Pinto selected by hand, yeasts and volcanic water of natural source. The plants are bred according to rational cultivation practices and, once reached the perfect stage of ripening, proceed with the harvest and subsequent alcoholic fermentation of the sugar juice contained in the agave. The subsequent distillation is carried out in copper stills while the ageing phase takes place in French oak barrels which previously contained wine from Burgundy, Loire and Bordeaux, Except for the Blanco type which is refined exclusively in steel. The liquids are not subjected to any filtration process and the use of additives is excluded.
The selection of Don Fulano proposes different types and styles of tequila, united by a unique and distinctive character due to the long maturities in oak barrels previously used for the aging of wine.
