Pimm's is a British brand with a two-decade history linked to the myth of oyster bars, kiosks specialising in serving oysters and other shellfish. It was the year 1823 when James Pimm decided to open his oyster bar in London. Seeking a combination that would aid digestion while enhancing the flavour of the shellfish, he created a cocktail based on gin, quinine and herbs that he began serving in a small glass called the N°1 Cup. It was such a success that in the following decades the entrepreneur marketed bottles of Pimm's N°1, together with variants Pimm's N°2 and Pimm's N°3, on a large scale, refining the original recipe, which had remained secret over the centuries. In 1865 the brand was sold to Frederick Sawyer while in 1880 it passed to the future Mayor of London Horatio Davies, who opened the Pimm's Oyster Houses chain in 1887. In the 1970s the property was taken over by the Distillers Company, which in turn was bought by Guinness in 1986. In 1997, Guinness merged with the Grand Metropolitan company to form the important Diageo Group, a landmark in the world of alcoholic beverages. Pimm's spirits have established themselves over the centuries as a must for the English aperitif, especially in southern England, so much so that Pimm's No. 1 was voted the official drink of the Wimbledon Tournament, the oldest tennis event in the world.

For the production of its liqueurs, the British company Pimm's uses different types of fruits and herbs, which are combined with a distillate base. The most popular is Pimm's N°1, produced from a gin base according to a secret recipe known only to six people worldwide. Other bases that have been used throughout the brand's history include scotch whisky, rum and vodka, among others.
