The Anejo Tequila of the Mexican distillery Don Fulano is the fruit of a continuous quest for excellence, which goes through all the stages of production, from the selection of the raw material, to the careful processing, carried out in full respect of the most ancient traditions, to the choice of noble French woods for ageing. For several generations, the Fonseca family has been cultivating the blue agave in the highlands of the Jalisco region and producing a range of labels appreciated for their expressive purity and unquestionable ability to give voice to the best customs of the land.
Anejo is a Don Fulano Tequila made according to the traditional teachings of the old masters of distillation, who have passed on their valuable knowledge through the generations. The quality of the distillate stems from a raw material of absolute excellence. The blue agave, of the best Maduro and Pinto varieties, is cultivated in an area that has always had a vocation for it. The highlands of Jalisco are the cradle of this ancient plant, which grows luxuriantly here spontaneously and naturally. The processing still follows artisanal savoir-faire, with manual cutting of the agave to obtain the precious heart, which is cooked in ovens before proceeding to fermentation with indigenous yeasts. Classic copper stills are used for distillation. The Tequila then undergoes a long ageing process, which includes a minimum of 30 months in French oak barrels, previously used for the ageing of quality wines. The water used to lower the alcohol content comes from pristine volcanic springs.
Tequila Anejo, made by Don Fulano, is the long-aged version of the famous Mexican distillery. It is a label dedicated to those who prefer soft distillates characterised by a prevalence of rich notes of tertiary evolution over the clear fragrance of young, fresh Tequila. To the eye, it has a light amber colour with luminous reflections. The olfactory picture is rich and complex, with aromas reminiscent of soft spices, dried fruit, toasted almonds and nuts, honeyed softness and caramel, sweet notes of tropical fruit and vegetal nuances of medicinal herbs. The sip is ample and satisfying, with enveloping and deep aromas that anticipate a harmonious and very persistent finish.
