The Fiano del Salento Notte Rossa is a Apulian version of one of the most important and historic native Campanian grape varieties, which has adapted very well over the centuries to the generous lands of the Salento peninsula. It is an interpretation that focuses mainly on the immediate fruity pleasantness of the wine, with a lively, fresh, and convivial sip. A fragrant, Mediterranean, and marine white, characterized by a harmonious and balanced profile, with beautiful citrus notes and white-fleshed fruit, making it an ideal companion for summer dinners.
The white Fiano del Salento Notte Rossa comes from vineyards located in the area north of the province of Taranto, on the first hilly elevations of the Sava hinterland, at an altitude of about 150 meters above sea level. The soils are medium-textured, predominantly clay-based, shallow, and with abundant presence of gravel. The climate is warm and dry, typically Mediterranean, mitigated by the constant presence of sea breezes, which keep the vines well-ventilated and the bunches dry. The harvest takes place towards the end of August and the grapes are gently pressed. After a cold static decantation, the must is started on fermentation, which takes place in stainless steel tanks at a controlled temperature of about 16 °C. Before proceeding to bottling and marketing, the wine is aged for a few months in steel tanks.
