The Brut Franciacorta "Gran Cuvée" is the most widespread and well-known label made by Castello Bonomi, born from the desire to produce a generous, pleasant, and elegant sparkling wine. It is a bottle in which Chardonnay represents its soul: well 22 different cru of property are selected, scattered in the southernmost part of the DOCG, from which the grapes are obtained. A satisfying and explosive Brut on the palate, which reveals a beautiful territorial adherence.
This Franciacorta Brut "Gran Cuvée" comes from selected vines from 22 different parcels located within the vineyards of Castello Bonomi, in the southernmost area of Franciacorta, near Monte Orfano. The grapes, once selected and arrived at the winemaking facilities of the winery, are softly pressed and started to the first fermentation, both in steel and in wood, using cold techniques. The refermentation takes place in the bottle, according to the production standards of the Metodo Classico, and the wine ages on the lees for 36 months, a period at the end of which the operations of disgorging, dosage, and bottling are carried out.
The "Gran Cuvée" made by Castello di Bonomi is a Franciacorta Brut that, to the eye, presents itself with a color tending towards golden; the perlage is of fine grain and has excellent persistence. The aromas that outline the olfactory profile of this label move on fruity notes, which gradually give way to more spicy sensations and aromas reminiscent of toasted hazelnut. On the palate, it is full-bodied, balanced, characterized by a fresh and savory sip, in perfect taste-olfactory balance. It ends with a persistent finish, enriched by a mineral aftertaste. A bottle with which the winery wants to represent the great vocation of the Franciacorta terroir for bubbles.
