Franciacorta Extra Brut 'Coro delle Monache' 2015

The Franciacorta Extra Brut ‘Coro delle Monache’ by Arcari + Danesi is a tribute to Brescia, and the name recalls one of the most beautiful environments of the Monastery of Santa Giulia, a UNESCO heritage site. Made from black grapes vinified in white using the ‘Solouva’ method, which employs only self-produced sugar from must, it rests for six years on the lees. On the nose, it is mature and complex, with a pastry and dried fruit side, hints of apricot and candied citrus, and a touch of honey. On the palate, it is creamy and taut, with vibrant freshness, a dry sip, and a long, savory finish, ideal with raw fish or seafood risotto.
