It is not easy in a highly productive area like Franciacorta to decide to make wine out of passion, focusing on low yields and small plots of land. The guys at 1701 decided to undertake this 'crazy' project, having had 4 hectares in the well-known area devoted to the classic method for several centuries and deciding to convert them entirely to the precepts of biodynamics. The first local wine cellar to make such a clear-cut choice, that of 1701 is a story of increasingly convincing and complete liquids, until it has established itself as one of the most interesting and qualitative realities in the area. Just 50000 bottles in all, destined for enthusiasts or those seeking vibrant and authentic experiences.
The Franciacorta Saten sparkling wine of 1701 is made from pure Chardonnay grapes grown in the well-known area in the province of Brescia. In the vineyard, the precepts of biodynamics are followed to obtain healthy and qualitatively perfect fruit, while the harvest is carried out exclusively by hand with careful selection of the bunches right from the vineyard. After extremely gentle destemming, the first fermentation takes place in steel containers, thanks to the action of indigenous yeasts and the preparation of a pied de cuve. Each vineyard is vinified separately and assembled for re-fermentation in the bottle. In the case of Saten, maturation on the lees takes place for 30 months.
The Franciacorta Saten wine appears in the glass in a straw-yellow colour with an extremely fine and persistent perlage. From the very first smell, it shows that it has many arrows in its bow, for a nose of great breadth and complexity: small pastries, clarified butter, almonds and hazelnuts, as well as hints of golden apples. A veritable hymn to finesse, the liquid is at its best on the palate, where it combines creaminess with a refined savoury thorn that considerably lengthens the sip. Ductile and versatile, it is a wine that accompanies hors d'oeuvres and main courses, as well as fish-based first courses.
