The ‘ColFondo Agricolo’ by Bele Casel is an artisanal sparkling wine that tells the story of this tradition from the Treviso Hills. It is born on the hill of Monfumo from agriculture that uses only copper and sulfur. The base wine ages in steel for 8 months before refermenting in the bottle, without disgorgement. On the nose, it surprises with fresh notes of flowers, citrus, and pleasant yeasty hints; on the palate, it stands out for its savory, almost salty profile. The advice is to gently shake the bottle to suspend the yeasts from the sediment, an integral part of its personality.
