Grillo Baglio di Pianetto 2025

The Grillo "Timeo" from Baglio di Pianetto is one of the most representative whites of the Sicilian winery. It is part of the Classics collection, created by Count Paolo Marzotto with the intention of producing a series of labels that can express the authentic character of Sicily with the elegant style of French tradition. The name comes from a dialogue by Plato and aims to highlight the deep connection with culture, philosophy, and science, of a project that goes beyond wine. It is a high-altitude Grillo, distinguished by a fresh, refined, and austere profile, with very delicate and subtle aromatic notes.

“Timeo” is a Grillo that originates from the splendid estate of Baglio di Pianetto, a property of over 100 hectares located in the hinterland of Palermo. The vineyards are cultivated in Contrada Pianetto in Santa Cristina Gela at an altitude of about 650 meters above sea level, an area of high hills, characterized by a very cool climate, always windy, and with significant temperature fluctuations. The soils are stony and of medium texture, with a dominance of clays. The harvest takes place in two different moments. The first picking is slightly anticipated to preserve freshness, while the second occurs in a phase of slight overripeness, in order to obtain soft and rich aromas. After a brief cryomaceration, the grapes are gently pressed and the free-run must is fermented in stainless steel tanks at controlled temperature. Before proceeding to bottling, the wine matures sur-lies for at least 6 months in steel tanks

The Grillo "Timeo" from Baglio di Pianetto is the best interpreter of the territory of Santa Cristina Gela. It is a white wine of great personality, intense, elegant, and slightly aromatic, which pairs very well with seafood pasta dishes, mollusks, shellfish, oven-baked or grilled fish. In the glass, it presents a straw yellow color with subtle greenish reflections. The bouquet recalls aromas of aromatic herbs, orange blossom, broom, scents of white fruit, yellow melon, peach, and hints of fresh almond. The sip is intense and fragrant, with harmonious fruit and a finish savory and refreshing.
